A few weeks ago, I received a message from my friend Nicci, asking if I could make a cake for her son Bryson's birthday. I made his cake last year - my first vegan cake, decorated with the face of Mickey Mouse. She wanted another cake, same dietary needs (except this time there was no soy allergy like last year), and this time she wanted Curious George and balloons, since we all know how much Curious George loves balloons. I love that cute little monkey! And I had so much fun decorating this cake. My daughter watched me make the decorations and at one point she said, "mommy, is that playdoh?" She was referring to the fondant that I use, and I said, "yes, it's like playdoh you can eat. And that's what makes decorating cakes so much fun!"
The cake is a delicious chocolate (you'd never know it was vegan!), and it is frosted and filled with a dairy-free vanilla buttercream, decorated with fondant and gum paste accents.
